{Recipe} ~ Creamy Corn Dip

Mmm, if there's anything I love, it's a good appetizer. I could make a meal out of dips, chips & salsa, etc. I've had this one pinned for awhile and made it Saturday in the hopes of toting it to the pool Sunday. But...the weather had different plans. So we ate the dip inside while watching movies. Oh well, it was still delicious. I'd definitely bring it to a tailgate or serve it for a party! I used fresh corn (two cobs) and chopped up some red pepper and threw that in with the rest of the ingredients!

Creamy Cool Corn Dip


  • 3 (11 oz.) cans of mexi or fiesta corn, drained (The kind that has peppers added to it)
  • 3 green onions, diced
  • 1/3 cup light mayonnaise
  • 1/3 cup light sour cream
  • 1 Tbsp lime juice
  • 1 tsp garlic salt
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 tsp sugar
  • Frito scoops or other corn chips
Combine all ingredients together in a large bowl and refrigerate for at least 1 hour.  Serve with Frito scoops.
