Let's Talk Running...and Plans!

Let's be honest here, I love a good plan. I'm an accountant, after all. When I graduated from grad school last August, and had 3 months off until I started my first job, I constantly thought, "What am I going to do with all that FREE time?" For someone who had spent 15 hours a day studying for the CPA Exam for the previous 8 months, you would've thought I would enjoy the idea of waking up with not a darn thing to do. But it was weird. No plans? No schedule? No classes to attend and no tests to study for? Those, my friends, are the thoughts of a Type A, slightly OCD, girl.

But, those months came and went, and when people asked me what I did all day, I simply said, "I wake up, eat breakfast, watch the Today Show for a couple of hours, go for a run, lay by the pool, cook dinner, and sleep." It was wonderful. The most carefree months I'd had in a long time. I trained for my first half marathon during that time, which gave me a goal to work towards and something to do.

I wish I had started the blog back then, so I could look back on my training. The only two runs that stick out in my head are a 6-miler and a 10-miler, both of which were my longest distances to date at the time. The 6-miler was the first run EVER where I didn't stop once. I ran a whole hour and didn't stop. I remember coming back into the apartment and jumping up and down with Lauren, saying "I DID IT! I RAN 6 WHOLE MILES!" I texted several people. It was an exciting day.

Then the 10-miler came along. Same thing. It was actually the same day as the half marathon I'll be running this year. I set out, and ended up running part of the race course, to which volunteers offered me water and Gatorade even though I wasn't running the race. It was a great run. I didn't stop. I wanted to tell people as I passed them on the Swamp Rabbit Trail, "I've been running for an hour and a half and I could keep going!"

What is my point in all this? (I promise I have one). Training for this year's half marathon is going to be extremely different. And I'm a little nervous. I'm unavailable from 7 am - 5:30 pm, a solid chunk of the day. I can't just set out for a run when I feel like it. I think I've had the half marathon on the brain a lot lately, mainly because my last couple of runs have been difficult (and only 2 miles). Ryan and I went for a short run on Sunday morning, and it sucked. I chalked it up to giving blood several days before, but as Ryan so honestly put it, "You're breathing awfully heavy for only running two miles." Thanks Ry, love you too. That was weird. I've never called him "Ry" before.  Side note: I actually do love his honesty.

I shouldn't be surprised that running isn't effortless. I'm not exercising on a regular basis. I workout for 4 days in a row, then take 10 days off because I'm out of town for work, on vacation, lazy, would rather take a nap instead, etc. I know, they're excuses. I rarely deny myself a "I feel like doing nothing today, so that's exactly what I'm going to do" day.

All this to say: I need to get back on track. With working out and eating better. Did you know that working in a town for three days where the only food options are McDonald's and Huddle House does not allow for healthy eating? I've got to buckle down and work hard if I want to kick this half'marathon's butt (which is exactly what I plan to do). I'm heading to the beach the first week in July, and it seems like a perfectly good time to get back on track (and fitting, too, since it's my birthday month and practically a fresh start)! I can wake up early before the humidity gets too awful and go for a run on the beach. A beach run is a great workout for the calves, too!

I already have my half marathon training plan ready to go. I created it oh, probably, 3 months ago. I'm a nerd. Yes. I freely admit it.


So there you have it. 12 weeks of delightful running, all which will be recapped for you here. Those Monday's of "Rest" will probably involve Kettlebells at the Y, as I'm now officially obsessed with the class and the fact that "Call Me Maybe" is on the playlist rotation. Friday's will probably be yoga at the Y, or maybe the elliptical. I haven't quite decided yet.

I moved my long runs to Sunday and made Saturday a rest day, as it's football season, and I have season tickets to see my Tigers play. So Saturdays are out of the question, workout wise. Clemson is notorious for noon games, which means leaving Greenville at 8 am or earlier. It's all worth it, though, so I'm not complaining one bit.

Remember at the beginning of this post, when I talked about plans? Drumroll, please. My plans are TO RUN BEFORE WORK. Groundbreaking news. But honestly, it's just the only logical thing. It'll be before it gets too hot and humid, my run is already out of the way before 7 am, and I'm free to do whatever my heart desires after work. I'm self-admittedly a morning person, so I know this is do-able. Getting up at 6 am instead of 6:45 won't make a huge difference. It'll just mean I'll have to go to bed a little earlier in order to wake up at a decent hour. I can do this. I'll start next week.

{Recipe} ~ Creamy Lemon Basil Potato Salad

I really enjoyed this different spin on potato salad! The combination of flavors was refreshing and the pine nuts added a nice crunch. I could see myself making this again, to eat for lunches, but I think it would be hard to take it to a pot-luck or BBQ, simply because your picky eaters may not enjoy this twist on an old classic.

It was incredibly easy to make and I just halved the recipe to make enough for 3 servings. Lauren, Staci, and I cleaned our bowls! Honestly, I love Ree's recipes. She's by far my favorite cook I've discovered recently. Every recipe I try turns out to be delicious and a crowd pleaser! I just caught her show on the Food Network last week and was so excited to see her in action!

Creamy Lemon Basil Potato Salad
from The Pioneer Woman



Ingredients

  • 1 bag (24-28 Ounce) Small Potatoes
  • 2 whole Lemons, Juiced
  • 3 Tablespoons Olive Oil
  • 1/2 cup Mayonnaise
  • Salt And Pepper, to taste
  • 1 Tablespoon Prepared Pesto
  • 1/4 cup Pine Nuts
  • Small Basil Leaves

Preparation Instructions

Boil potatoes in lightly salted water until fork tender. Drain, cut in half, then place in a bowl.
Toast pine nuts in a skillet over low heat until just lightly golden. Remove from heat. 
Mix together lemon juice, olive oil, mayonnaise, salt & pepper, and pesto until creamy and smooth. Taste and adjust seasonings as you'd like.
Pour half the dressing over the potatoes and toss to combine. Add more dressing to taste. 
Cover and refrigerate the potato salad for a few hours. To serve, sprinkle lots of small basil leaves over the top. Yum!

Thankful Things Thursday

Wow, it's been awhile since I've done one of these posts! My week usually gets infinitely busier towards the end of the week, so posting on Thursday doesn't always happen. But we had a thunderstorm this morning that woke me up at 6 am, and running in the rain wasn't an option, so...I made some coffee earlier than usual and now we're going to be thankful! Let's go!

I'm thankful for the rain! It's been raining on and off for the past couple of days and we certainly need it here. It's made my commute a bit of a challenge, but I love waking up to the sound of rain. Does anyone else feel this way about rain? Or is it something you just kind of tolerate because you have no choice?

I'm thankful for the season premiere of my absolute favorite TV show tonight:


It's a summer TV series that comes on USA. My friend Logan got me hooked on it last summer, and when Lauren and I weren't working last fall, we ended up laying in bed for an entire day and watched the entire season. I went ahead and bought the DVD's so Ryan could get hooked, too! I really do love this show. The guys are cocky and sarcastic and funny. Ryan thinks the plot is a little predictable, but who cares? The fact that I am willing to follow a TV show is saying a lot (I haven't watched a show consistently in years)! Tune in tonight at 10 - let me know what you think!

I'm thankful I discovered the most amazing farmer's market last week. Someone at work was telling me about a state-run farmer's market nearby that stays open everyday, year round. I've lived here for 10 months now and had no idea this place existed. I went Friday afternoon after work and it was love at first sight.


I got a huge selection of veggies (tomatoes! corn! okra! squash!) for less than $10. I wanted to buy more but I knew Lauren would kill me when I realized it wouldn't all fit in the fridge...

I'm planning on hitting the farmer's market downtown Greenville on Saturday. I've been meaning to go for awhile, but usually the weekends are filled with activities. I have no plans on the calendar for the first weekend in awhile (minus Father's Day) so I'm going to check it out. A friend had some delicious goat cheese she had bought at the market a few weeks ago and I'm dying to get my hands on another tub of the spread (it had honey in it)! My spoils will probably be evident in a few new recipe posts coming up!

I'm thankful for the opportunity to donate blood. We're having a blood drive at work today, and I'm really hoping to donate. Last time I tried to give, my blood pressure was too high and they turned me away. I think I got a little too nervous and was overthinking the whole process the last time. I've given blood successfully once before in college, so I know I can do it! I'm a universal donor, so they need me! Here's to hoping I don't pass out! 

I'm thankful for cheap(er) gas. Enough said.


I'm thankful for cute puppies. A man sitting next to us at happy hour last Friday had 3 huge puppies (bernese mountain dog, husky, and a saint bernard). They were already bigger than me and weren't full grown. They were pretty fluffy and cute to watch while we all agreed what a pain it would be to vaccuum up all that hair! But poor doggies, they were dying from the heat!


I'm thankful I got to have lunch at the Esso yesterday. If you've never heard of The Esso Club, check it out! It's history is important to Clemson, and it's been the subject of dozens of magazine articles and even a tailgating special on ESPN. They have a huge outdoor patio and a meat & three menu for lunch Monday-Friday. It's impossible to get a seat on the Friday before a home football game, but trust me, it's worth the wait. I can't tell you how many Friday afternoons in grad school were spent at the Esso. It's where we went to celebrate the finish of every CPA exam, too. We were at a client semi-nearby for work, and I begged the senior (also a Clemson alum) to make the 20 minute drive so we could eat there for lunch. What a flood of memories! It makes me miss college a little. Okay, a lot. Lunch was worth every single calorie, just for the walk down memory lane!



Last but not least, I'm thankful for sunsets. Shocking, I know. Are y'all getting tired of pictures of the sky yet? Too bad. They're here to stay!

{Recipe} ~ Creamy Corn Dip

Mmm, if there's anything I love, it's a good appetizer. I could make a meal out of dips, chips & salsa, etc. I've had this one pinned for awhile and made it Saturday in the hopes of toting it to the pool Sunday. But...the weather had different plans. So we ate the dip inside while watching movies. Oh well, it was still delicious. I'd definitely bring it to a tailgate or serve it for a party! I used fresh corn (two cobs) and chopped up some red pepper and threw that in with the rest of the ingredients!

Creamy Cool Corn Dip


  • 3 (11 oz.) cans of mexi or fiesta corn, drained (The kind that has peppers added to it)
  • 3 green onions, diced
  • 1/3 cup light mayonnaise
  • 1/3 cup light sour cream
  • 1 Tbsp lime juice
  • 1 tsp garlic salt
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 tsp sugar
  • Frito scoops or other corn chips
Combine all ingredients together in a large bowl and refrigerate for at least 1 hour.  Serve with Frito scoops.

{Recipe} ~ Chicken Pot Pie

Rainy Monday's have to be the worst. I only slept about five hours because I wanted to wait for Ryan to get home from Bonnaroo before I went to bed (which was after midnight). All day at work, while it poured raining outside, I just wanted to crawl under my desk and nap. Or even better, crawl in my bed in my pajamas and watch movies.

I knew I needed comfort food for dinner, so I whipped up my favorite comfort food (next to mac & cheese): chicken pot pie. I've adapted this recipe over the years until it's just the way I like it. I promise it's so easy and delicious. You'll never buy a frozen pot pie again!

Chicken Pot Pie


1/4 cup butter
1/4 cup all-purpose flour
1 10-ounce can cream of chicken soup
1 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon pepper
3 boneless, skinless chicken breasts
1 10-ounce package frozen mixed vegetables
2 pre-cut pie crusts
2 cups water


Instructions:
1. Preheat oven to 400°F.
2. Place 2-quart pot over medium-high heat and add water. Add chicken breasts to pot, making sure the water covers chicken but will not overflow.  Cover pan with lid and cook chicken for 15 minutes, or until done
3. Remove chicken from heat and use knife to cut in small pieces, trimming off extra fat. Set chicken aside.
4. In a separate saucepan, melt butter over low heat.
5. Add flour, stirring until mixture is smooth and thick.
6. Gradually add cream of chicken soup and chicken broth.
7. Stir in salt, pepper, mixed vegetables, and chicken.  Thoroughly stir to completely thaw vegetables.
8. Roll one pre-cut pie crust onto the pie pan, evenly distributing among pan.
9. Spoon chicken mixture into pie pan, filling pan to the top but making sure not to overfill it.
10. Cut the second pie crust into inch-wide strips.  Place them on top of the pie filling, alternating above and below the others to create a lattice.  Pinch the edges of both crusts together to keep the filling inside during cooking.
11. Place the pie pan in oven and bake for 30 minutes, until crust is golden brown.

Weekend Update ~ Old Friends!

A rainy Sunday seems like a perfect excuse for a movie and a nap on the couch, don't ya think?

This weekend was extremely low-key. Friday night was happy hour at Smoke on the Water (oh my, so delicious) and dinner with coworkers. I headed home before midnight and was asleep once my head hit the pillow.

Saturday was the highlight of the weekend though! One of my best friends and roommates from college was in town from California! And with her? Her adorable 9 month old daughter, Caroline! Something about having Sara in town had me feeling nostalgic, and I spent most of Saturday morning flipping through old pictures. Let's take a trip down memory lane!

Sara and I definitely go wayyy back! I miss late nights on the ZTA hall where we'd stay up all night talking about boys! Now she's married and lives with her hubby in California on the naval base. And she took my little niece with her!

We hung out with Caroline Saturday and then ordered pizza with Sara's mom and sister. Who doesn't love a 3 generation girl's night? So much fun. I love old friendships!
